A family tradition

Our smokehouses are running around the clock, filling the air outside our Sparks store with the sweet smell of mesquite, hickory, and apple woods. As with everything we do, every item from our smokehouse starts with fresh, great-quality product. We then add our cures and flavorings from our generations-old recipes to turn out the finest hams, bacon, salamis, turkey, hocks, and more.

The smokehouse used to be a big part of every hometown meat market. We continue the tradition of years gone by, bringing you unique and tasty treats.

Our famous hams start with fresh pork legs that get hand-trimmed, cured with our family recipe, and smoked slowly with hickory until they are a beautiful pink inside. We hold back on the salt as much as possible to make a great, healthy ham.

Many of our sausages get a trip through the smokehouse as well. Since we use all natural casings, they get a nice, crisp snap that you don't find in many brand name sausages.

Bacon, who doesn't like bacon? We don't know anyone! We use lean and meaty Canadian bellies that are hand-trimmed, pumped with a sweet cure, and smoked slowly in Mesquite or Applewood. If you have never tried it, you had better get a package of each to experience the subtle flavor differences each wood adds to the pork.
